Easy 1 Pot Savory Lentil Soup

Homemade soups are the absolute best and they aren’t nearly as intimidating as you may think! Our lentil soup is a staple in our house because it’s just that…SO EASY! Are there complicated ones? As with everything! But a majority are so simple and delicious that you gotta try it 😚

The Recipe

This immune-boosting lentil soup is made in 1 POT and has no sugar added. It’s rare to find soups with no sugar! Another added bonus to making your own, for sure! By keeping the sugar content down it is a healthy option for any time of the day.

We also add turmeric, which is an anti-inflammatory, helping boost the immune system. Turmeric by itself has many benefits but did you know that you can actually enhance all the benefits by adding another ingredient with it? Do you know what it is? Black pepper! By adding black pepper, we increase the benefits of the turmeric’s anti-inflammatory properties so make sure you take advantage of that and don’t forget the pepper!⁣⁣

Ingredients

  • 1 cup red lentils

  • 1 cup black beans

  • 1 cup corn

  • 1 can roasted tomatoes

  • 1 cup coconut milk or cashew milk

  • 1 small red onion

  • 32 oz veggie broth

  • 2 tsp chili powder

  • 3 tsp cumin

  • 1 tbsp garlic

  • 1 tsp turmeric

  • 1 tsp black pepper

Directions

  • In a large pot, sauté onion and garlic in a small amount of veggie broth until onion is lucid.⁣⁣
  • Add beans, corn, tomatoes, lentils and broth and bring to a boil and stir.⁣⁣
  • Add in coconut milk.
  • Add spices and bring to down to simmer. Simmer for 20 mins.
  • Serve and enjoy!

We hope you find this recipe just as delicious and easy as we do! Soups are perfect for appetizers, lunches and dinners and we totally believe that. When we make a giant batch of this soup it’s pretty common we eat it twice that day! If you don’t want to waste the soup, or are afraid you won’t get through it all we highly recommend freezing it for later! Find freezable storage containers and separate the soup into 3 containers. That way, you can always have one in the fridge ready to go and more for later. Right now with so many meals being prepared at home, meal planning is highly needed and we’ve put this one on our list.
