BROWNIES. A winner in every department in this household! I remember how easy it was to grab one of those box mixes from the grocery store knowing just how fast I could have gooey, chocolate fudge brownies. Once all of my allergies were figured out, the boxed brownies were no more. I knew I wanted to come up with a mix that was easy, and I mean like no-need-to-go-to-the-store easy! So I came up with this banana brownie recipe that included only ingredients that are true staples in my pantry and fridge. I have found the recipe that makes my mouth water at just the thought of them and can’t wait for you to try these! P.S. There is a SECRET INGREDIENT making these brownies even richer…know what it might be?
Coffee! The secret ingredient to these oil-free banana brownies is coffee. Coffee compliments chocolate, as it enhances the flavor. It makes the chocolate richer so never be afraid if you find a brownie recipe with coffee in it! You can use caffeinated or decaf, you could even use espresso if you truly desired, as it doesn’t really matter. The coffee flavor will not come through the cake. The coffee will simply just enhance the brownies!
Bananas are what we use to make these moist and fudgy. Again, the banana in this recipe will not make them banana-y, but will add another layer of goodness. These Banana brownies are both gluten-free AND vegan! As a bonus, they are also nut-free, oil-free and soy-free, making these a great allergy-friendly dessert.
2/3 cup GF all-purpose flour
3/4 cup fair trade cacao powder
1/2 cup raw sugar
1/2 tsp baking powder
1/2 tsp salt
1/2 cup cooled coffee (decaf or regular)
2 medium mashed bananas
2 tbsp maple syrup or agave
1/2 tbsp vanilla
- Preheat oven to 350′.
- Mix all dry ingredients together.
- Add in bananas, coffee, maple syrup, and vanilla and mix.
- Pour into greased 8×8 baking pan and bake for 22-25 minutes, or until the top bounces back and doesn’t sink in.
- Let cool for 10 minutes before cutting and serve.
