
I’m making WAFFLES! Gluten-free, vegan AND refined-sugar-free, these waffles will become a new favorite.
Waffles, pancakes, French toast… all these things I absolutely love way more than I should. I am a sucker for those sugar-filled breakfasts! However, after switching to a plant-based diet not only do I not crave sugar nearly as much (I KNOW RIGHT?), if I do choose a sugary breakfast I tend to feel sick and my tummy is not happy. Although it may seem great in the moment it’s definitely not always worth it. So, if I can find or create a sugar-free or no-refined-sugar recipe that I love I won’t miss the old stuff and I LOVE that!
The Recipe
Coming up with a healthy waffle recipe was definitely high on my list and making sure it still had that sweetness was important. Store-bought waffles can be packed with refined sugar which, although tastes great, isn’t needed! There are great ways to add extra sweetness naturally. I love using date paste, which I’ll be putting together a recipe for that soon, or liquid sweeteners like maple syrup or agave. For this recipe I use date paste and it adds the perfect sweetness to these waffles. You won’t even realize there’s no refined sugar here!
Healthy Waffles

Ingredients
1 1/2 cups GF all-purpose flour (I used an ancient grain blend)
3 tsp baking powder
1 1/4 cups non-dairy milk
1/3 cup vegetable oil
2 Bob’s Red Mill Egg Replacer “eggs”
1-2 tbsp date paste (2-3 pitted dates)
1 tbsp vanilla
Directions
- Mix flour and baking powder together.
- Make 2 “eggs” from @bobsredmill replacer.
- In a blender or NutriBullet, blend milk, dates, oil and vanilla together.
- Add blended liquids and eggs to flour mixture and stir until combined.
- On preheated waffle maker (we use the Dash Mini Maker and love it!), add mixture (depends one waffle maker but I used 1/4 cup of mix) and cook according to maker’s directions.
- Serve warm and top with ALL your favorite toppings.
These waffles, ton top of being wonderful fresh, are great to freeze! Just like frozen waffles, stick these in a freezer-safe bag or container and safely store away. They toast up perfectly and are ready to go whenever you want them. We love making big batches at a time to store away. One less grocery store buy and money saved. We love it!
